New favorite thing to make

Over the weekend, my sister and I took to the kitchen and made some salads that we hadn’t made by ourselves before. We made a seven layer salad and a macaroni salad, mostly from memory with a few questions to our mom to make sure we had the ingredients correct and a bit of help from an old cook book. (We also made ham salad too but we have made that together before.)

Anyway, what Trish and I discovered is that our seven layer salad was a big hit with our family. Now we are under strict orders to make it all the time, or at least when we have the stuff to make it.

Our macaroni salad was a hit as well but that is a more common salad for us. We have also been sucked in by the commercial world and make it from a box most of the time. It was nice to make it from scratch again though.

So Friday night’s meal was met with rave reviews as we enjoyed a new episode of Chuck together. It was a lovely evening at home.

With this unprecedented blog topic, I will now share the ingredients we used for the seven layer salad. It’s definitely not an original recipe so I can’t claim ownership but I as I mentioned, it was a favorite at the Rodgers' household, even with my brother who is the pickiest eater of us all.

Seven layer salad as made by Pam and Trish Rodgers:

One Head of Lettuce (chopped or cut)

1/2 cup chopped celery

1/2 cup diced green pepper

1/2 cup diced onion

Grated/shredded cheese

Bacon bits

2 Cups Miracle Whip

1/2 tsps of sugar

Mix Miracle Whip and sugar together and set aside. Break the lettuce into the bottom of a 9x13 inch pan. Sprinkle celery, green pepper, onion over lettuce. Spread Miracle Whip mixture over the lettuce using a knife. Top with cheese and bacon bits. Refrigerate overnight.
